Fried Rice with Hot Garlic Sauce

Think of chinese cuisine and the first thing comes to your mind is Fried Rice. It is a very easy and veggie friendly dish.

A chinese dish of cooked rice stir- fried with vegetables making it absolutely colourful and appealing.

Tastes best when accompanied with a chinese sauce

Serves 3

Ingredients

For Fried Rice

  • Basmati rice – 1 cup, uncooked
  • Green chillies – 2, finely chopped
  • Spring onions – 2
  • Garlic flakes – 2, finely chopped
  • French beans – ¼ cup, finely sliced
  • Carrot -1, finely chopped
  • Capsicum (Big) – ½, chopped into big chunks
  • Oil – 3 teaspoons
  • Salt to taste
  • Pepper – ½ teaspoon
  • Ajinomoto – ½ teaspoon
  • Soya sauce – 1 teaspoon
  • Vinegar – 1 teaspoon (optional)

For Hot Garlic Sauce

  • Garlic cloves – 15 or garlic paste – 2 teaspoons
  • Dry whole red chillies – 2 to 3
  • Oil – 2 tablespoons
  • Tomato sauce – 2 tablespoons
  • Ajinomoto – a pinch
  • Soya sauce – 1 teaspoon
  • Pepper – ½ teaspoon
  • Salt to taste
  • Sugar – a pinch
  • Cornflour – 1 tablespoon mixed with 1 cup water

Method

For Fried Rice

  1. Cook the rice. Do not overcook. Strain and spread on a huge tray. Place it under a fan.
  2. Finely chop the spring onions, keeping the whites and greens separate.
  3. Heat oil in a non-stick pan and splutter green chillies.
  4. Add garlic and white of the spring onions.
  5. Add French beans, carrots and stir fry for 5 minutes. Add capsicum.
  6. Add salt, pepper, ajinomoto and cook till the vegetables are done. Let them remain a little crisp.
  7. Add rice, soya sauce, vinegar and green of spring onions. Mix well and serve hot.

For Hot Garlic Sauce

  1. Break the red chillies into small pieces. Peel the garlic.
  2. Grind the above into a smooth paste.
  3. Heat oil in a small pan and fry the chilli-garlic paste for 1 minute on low flame.
  4. Add tomato sauce, soya sauce, salt, pepper, ajinomoto, sugar and cook for ½ minute.
  5. Add cornflour paste. Stir continuously.
  6. Let it cook till the sauce thickens. Remove from fire and pour it in a bowl.
