A delicious and flavourful rice dish with variety of vegetables and spices.

An one-pot meal with layers of rice and vegetable gravy which with its aroma fills the room and the hearts of the diners.
Do try out my recipe with some unqiue ingredients.

Serves 6

Ingredients

For the Rice

  • Basmati Rice – 2 cups
  • Onion – 1, sliced
  • Cumin seeds – ½ teaspoon
  • Cinnamon – ½ inch piece
  • Cardamom – 1
  • Saffron strands (kesar) – few
  • Pani puri masala (Everest) – 1 tablespoon
  • Curd – 2 tablespoon
  • Kasuri methi – 1 tablespoon
  • Ghee – 1 tablespoon
  • Salt to taste

For the Gravy

  • Coconut – ½, grated
  • Cashew nuts – 3 tablespoons
  • Watermelon seeds – 1 tablespoon – Buy it here
  • French beneas – ½ cup, slant chopped
  • Carrot – 1 big, slant chopped
  • Capsicum – 1, slant chopped
  • Onion – 5 (1 – finely chopped, 4 – grinded)
  • Tomatoes – 4, grinded
  • Cardamom – 1
  • Cinnamon – ½ inch piece
  • Clove – 2
  • Turmeric powder – ½ teaspoon
  • Red chilli powder – 2 tablespoons
  • Pani puri masala (Everest) – 1 tablespoon
  • Kasuri methi – 1 tablespoon
  • Curd – 1 tablespoon
  • Salt to taste
  • Ghee – 2 tablespoon
  • Oil – 2 teaspoon

Method

For the Rice

  1. Heat ghee, splutter cumin seeds and add cardamom and cinnamon.
  2. Add onions and sauté them well.
  3. Add kesar, pani puri masala, curd, kasuri methi, rice, salt and water.
  4. Cook till rice is done.
  5. Once the rice is cooked, spread it on a large tray and keep aside.

For the Gravy

  1. Dry roast coconut, cashew nuts and watermelon seeds separately. Grind them together.
  2. Boil French beans, carrot and capsicum. Keep aside.
  3. Heat ghee and add cardamom, cinnamon and clove.
  4. Then add chopped onions and grinded onions. Sauté well.
  5. Add the above grinded coconut, cashew and seeds mix and grinded tomatoes. Cook till ghee appears on the sides.
  6. Add oil, turmeric powder, red chilli powder, salt, pani puri masala, kasuri methi and curd. Cook again till oil floats on top.
  7. Add the boiled vegetables in it. Mix well.

How to proceed

  1. In a large bowl, spread half of the quantity of rice.
  2. On top of it spread the gravy.
  3. Again spread the remaining rice on it.
  4. Serve hot with raita or salan.
